Very filling, definitely can be a main course! My only suggestion is to add some extra broth because the noodles soak it all up. Or recently when I made it, I made the noodles seperately and just poured the soup over the noodles. I also added kidney beans as well because I like a lot of beans in my minestrone.

Instructions to make Very Filling Minestrone:
  1. Cut the vegetables into small dices. Spring cabbage is nice in the spring.
  2. Add the garlic to a generous amount of olive oil. Start sautéing the vegetables, starting with the harder ones and adding the softer ones later.
  3. Season the vegetables properly with salt and pepper at this stage!
  4. When the vegetables are more or less cooked…add enough water to cover as well as the ☆ ingredients, and simmer!
  5. Simmer for a while, skim off any scum. Add the ★ ingredents and keep simmering over low heat. (About 30 minutes.)
