  1. Brown ground beef and season as desired. I use onion and garlic powder, black pepper, red pepper flakes and salt. Then drain.
  2. Add kidney beans, corn, rotel and tomatoes along with water to the pot containing the ground beef. Mix well.
  3. Add taco seasoning and ranch mix. Mix well.
  4. Bring to a strong rolling boil and add cream cheese in chunks to the pot.
  5. Boil and mix continuously until cream cheese is completely melted
  6. Serve with desired toppings and enjoy!!!

I just love soup with cream cheese. It adds the perfect amount of tanginess and creaminess! Add the bell pepper, Rotel diced tomatoes, cream cheese, and spices. Pour in beef broth and reduce heat to low-medium. Shred the chicken and stir it into the crock pot.
